Some Adventures in Cooking

With the CSA coming to the fall season of squash and the like, I have a need to find interesting ways to use squash and eggplant. I am pretty good with pizza and making my own dough. (I have tried making my own mozzarella, but after 3-4 tries that experiment is put on the self for later) So last night I made and served butternut squash pizza and eggplant pizza. I had to sub the ricotta cheese with regular mozzarella and cut out most of the pepper in the eggplant pizza. My kids won't touch food with the hint of pepper.
In the end, they both came out very well. I preferred the eggplant, which was a surprise. I generally do not like eggplant. But I think all the garlic and onions I sprinkled with some salt hid what I don't like about it. I finished the leftovers at lunch. Pretty sure I have major garlic breath.

Progress on Addition - Siding and grading done



OK, so I'm a little behind. These were taken April 21. The inside has the plumbing and electrical ruffed in. As of yesterday, the drywall was started. We hope to get some painting done next week.

Bath Redo


We had a plan from the original Architecturals. But after we saw i framed, we are worried that the shower was to small. Its so hard to look at the plans and envision what it will be in reality. So, after talking to Gary, we are going to change it around. This plan shows what we want to do instead.

Porch Goes Up



The porch has been framed enough that we can walk out from the French doors we put in 7 years ago. The roof trusses are supposed to go up this week.

Up in No TIme



After the concrete floor was poured, it took only 2 days to have a second floor. We still have to officially pick the new siding for the house. We have 2 picked out, but these may be over budget. I'll hopefully find out in a day or so. The roof may be up in a week if the weather holds.

Sunday




On Sunday while we went to church , the crew showed up again to do some work. By the end of the day, it seems they have finished the little retaining wall and garage wall/foundation.

A Lot Can Happen in a Day




It is Saturday. All of a sudden, the addition had taken shape. They plan to work tomorrow in case Monday's weather becomes a problem.

Pouring the Foundation

After they cleared the area of snow on Monday, they dug the driveway and cut the last trees on Tuesday. On Wednesday, the foundation was poured.

Addition is on


Its been a long time, but we are finally doing something with the addition.
After months of plans and contractor bids, then more more months of financing hell, we have the building permit approved.
The septic tank was upgraded by Freestate septic. Then last Friday, they started to remove some trees that are in the way. I was suprised, as was the Gary Luckett (our General Contractor). Although, a little chaos ensued because they weren't expected till Monday, I'm glad they did. Because it has snowed since Saturday. More snow this weekend. So, I don't expect to see much else done till next week.

First day with the Thompsons in Buffalo we went to Niagara Falls.
Enjoyed the walk along the falls on the deck. I can see why the Canada
side is popular. But , very touristy.
